I almost gave up on paleo baked goods… a few times. However, desperation encourages repeated attempts. Somewhere around day 40 of our Paleo Challenge with CrossFit Rebellion, I bravely attempted the Morning Glory Muffins recipe from Paleo Comfort Foods. They’re awesome. Friday morning I was up before Sophia, so I thought I’d get a head start on the day by making some of these muffins. The recipe is really easy. Essentially, it’s almond flour, shredded carrots, shredded apple, raisins, shredded coconut, coconut oil, eggs and honey.
I hate shredding the carrots and apples, but I always think the carrots are really pretty when I add them into the mix. As I grate my knuckles while shredding the apple, I always consider using apple sauce. I’ve never done it, but this morning I measured: one shredded apple is about a half cup.
Once all the dry ingredients are in the bowl, it’s just a matter of stirring them up before adding the wet ingredients. I always sneak a couple spoonfuls of the dry ingredients. It’s salty, nutty, fruity and crunchy.
After 40 minutes in the oven, the recipe says to let them cool in the tin for about 8-10 minutes. I usually don’t wait, I just pluck them out so I can eat them sooner. Also, I’m guessing if you use a nonstick pan like I did, you could knock a few minutes off the cooking time, but I kind of like the crunch of leaving them in a little longer.
Just because every breakfast should have SOME protein, I put a couple of boiled eggs on the side. I know it’s not much, and I try to start my day off with more protein than this; but these 12 grams can’t hurt. Gotta have my dark roast coffee too, despite any side effects advertised by my mug.
